Culinary habits in the Bieszczady Mountains date back to the times of Ruthenian settlement and have changed over the centuries. Analyzing the history of the Bieszczady cuisine, it can be concluded that the fashion for various dishes changes depending on the progress in agriculture (introducing new species in crops, breeding, etc.)
The basis of everyday meals were cabbage, potatoes, flour and groats. The fat to these dishes was bacon - "szpyrka" and linseed oil, and there were pastries for the holidays. In Italian, such a kitchen is called "la cucina povera", that is, the kitchen of the poor.
